Every Part of the Potato Bars! Coconut 'uala bars.

Vegan/gluten free/oil free delicious 'uala (Hawaiian Purple Sweet Potato) bars are well work the effort it takes to make them as they bring a little taste of Hawaii right to your door step. You can enjoy this nutty crust with a Molokai mashed filling with delicious coconut ice cream or as a healthy snack on the go. Have fun making these and enjoy!




Ingredients

Crust

- 1 cup Rolled Oats

- 1/2 cup Mac Nuts

- 1/2 cup Almonds

- 1 tsp Ground Ginger

- 100 grams Dates

Filling

- 900 grams Unpeeled Purple Sweet Potatoes

- Juice of 1/2 Lemon

- 1/4 cup Maple Syrup

- 1/2 can of Full Fat Coconut Milk

- 1 tsp Vanilla Extract


Directions

1. Cut potatoes into chunks and steam until tender.

2. Pre-heat oven to 400F.

3. Peel sweet potatoes put skins into a food processor and flesh into a large bowl.

4. If your food processor is large enough, process all your crust ingredients with the sweet potato skins. If it's not, process items individually. The texture should stick together, but have crumb sized pieces.

5. Press crust into a 8 by 8 inch pan lined with a parchment paper. Bake for 10 minutes.

6. While the crust is baking, blend the filling ingredients. It should be smooth and not have any lumps.

7. Pour filling into pan and smooth over. Bake for 20 minutes.

8. Cool, cut, and serve. Have fun and enjoy!
