Lembas bread! “One bite will fill the stomach of a duly grown man!” Or in the books, “one will keep a traveller on his feet for a day of long labour, even if he be one of the tall Men of Minas Tirith.” -Lord of the Rings, Fellowship of the Ring.
Lembas bread is the mythical Elvish Waybread.
My take is Vegan and Gluten-free! As it is described as “The food was mostly baked in the form of very thin cakes, made of a meal the color of cream.” And sweeter than Cram.
My interpretation was that is was a soft scone like texture with a light texture and sweet lemony taste.
Lembas Bread:
-3/4 cup gluten free all purpose flour blend
-1/2 cup coconut flour
-1/4 cup sugar
- 2 Tbsp ground flax
-1 tsp baking powder
- Zest of one lemon and the juice of one lemon
-Around of 3/4 cup plant milk
Directions:
1. Pre heat oven to 400F.
2. Mix flours, baking powder, and flax.
3. Add in juice and zest of the lemon.
4. Add in plant milk in small amounts until the batter is soft and holds together.
5. Form into shape and bake for 15 minutes.
6. Turn down oven to 375F and bake for 15 to 20 minutes or until the batter is golden brown.
