Snowball Cookies

Throw some tasty snowballs this year with this gluten free vegan crumbly wonders. These balls of joy are guaranteed to bring joy to any holiday party.



Ingredients

- 1 cup coconut flour

-1 cup gluten free all purpose flour

- 1/2 Cup vegan butter

- 1/2 c granulated sugar

- 1 tsp vanilla extract

- 1/4 tsp almond extract

1/4 cup plant milk

- 1 tsp vanilla extract

- 1 tsp baking powder

- 1 tsp baking soda

- 1/4 tsp salt

- 1/3 pecans

- 1/2 cup powdered sugar

Directions

1. Mix flours, salt, granulated sugar, baking powder, baking soda, and pecans in a bowl.

2. Add the rest and blend with a hand blender until combined.

3. Chill for 1 hour

4. Preheat oven to 350F

5. Roll into 20 balls and bake for 10 minutes, turn them over and bake for another 5 to 10 minutes. It should be slightly brown and hold together.

6. Cool for three minutes and roll into powdered sugar.

7. Store and enjoy!
