Banana Chocolate Muffins

These delicious vegan/gluten free/refined sugar free banana chocolate chip muffins are the perfect way to start or end our day. They are fluffy, crispy, and perfect for a potluck for kids. You can subs the flours for wheat flours. You can take a tooth pick spread out the melty chocolate to make the chocolate chips look like spiders! Happy Baking!


Ingredients

1 1/4 cup Gluten free Flour

1 1/4 cup Almond Flour

2 tsp Baking Powder

1/4 tsp Salt

1/4 tsp Baking Soda

1/3 cup Chocolate chips

1 tsp Cinnamon

1 tsp Apple Cider Vinegar

3 Medium Bananas

1/2 cup Plant Milk

1 tsp Vanilla Extract

1/4 cup Apple Sauce


Directions:

1) Pre-heat oven to 350F

2) Mix dry ingredients (cinnamon, flour, baking powder/soda, and salt) together in a medium bowl. Add chocolate chips.

3) Mix wet ingredients (mashed banana, apple cider vinegar, plant milk, vanilla extract, ans apple sauce) in a small bowl.

4) Pour wet into dry and fold together until combined.

5) Pour into 10 lined muffin tins.

6) Bake for 20 minutes or until fully cooked.

7) Enjoy!
