Banana Cupcakes with Chocolate and Peanutbutter Frosting

This is a dreamy, fluffy, banana cupcake recipe topped with my peanut butter and chocolate frosting. This is not gluten-free, but can easily be made gluten free with gluten-free flour blend. Kids really like this recipe and it's easy to double and prepare. Not the healthiest recipe but it's fun and simple. To make these special you can add chocolate chips to the batter, peanuts, or banana chunks. Have fun making these, enjoy!
Makes 12 cupcakes
Ingredients
Cupcakes
- 1/2 cup Banana Puree
- 1/3 tsp Cinnamon
- 1 cup + 1 Tbsp All Purpose Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Power
- 1/3 tsp Salt
- 2/3 cup + 2 Tbsp Sugar
- 2 Tbsp Coconut oil
- 2 Tbsp Apple sauce
- 1 Tsp Apple Cider Vinegar
- 1/3 cup + 2 Tbsp Plant Milk
- 1 tsp Vanilla Extract
- 1/3 tsp Almond Extract
- 1 tsp Egg Replacer (I use Bob red Mill) or Ground Flax
Chocolate Frosting for 12 cupcakes
- 1/2 cup Vegan Butter
- 1/2 cup Vegetable Shortening
- 1 cup Confectioners Sugar
- 1/2 tsp Vanilla Extract
-Plant milk as needed
Peanut Butter Frosting for 12 cupcakes
- 1/2 cup Peanut butter
- 1/4 cup Vegetable Shortening
- 2 1/2 cup Powdered Sugar
- 1 tsp Vanilla Extract
- Plant Milk as needed
Toppings
- Banana Chips
- Chocolate Chips
Directions:
1) Heat oven to 350°F and line cupcake pan with liners.
2) Mix dry ingredients in a medium bowl.
3) Cream with a hand blender in a large bowl on medium speed, sugar, coconut oil, and apple sauce.
4) Stir together replacer, plant milk, and apple cider vinegar.
5)Add the rest of wet ingredients to plant milk.
6) Alternate adding the milk and flour to the sugar mixture until all ingredients are incorporated. Don't over mix, this will make your cake bread like. Mix just until there are no more flour streaks.
7) Scoop 1/4 cup of batter into each linear.
8) Bake for 20-22 minutes.
Frosting Directions
1) Place ingredients in a medium bowl.
2) Blend with a hand blender on low, moving to high as the powdered sugar combined. Whip for about 4 minutes.
3) Add plant milk or powdered sugar to get the consistency you desire.
