Carrot Cake Oatmeal

Carrot cake oatmeal with almond butter, raisins, and bunny apples. This is a perfect spring breakfast. It's easy, fast, and delicious. You can also make this into overnight oats by adding all the ingredients in a jar and letting it sit over night, You can add walnuts, almond butter, apple, candied ginger, and cranberries. I don't sweeten this, but some maple syrup would be good.



Serves 1 Time 20

Ingredients

- 1/2 cup Oats

- 1/3 cup Grated Carrot

- 1 Apple

- 1 Tbsp Raisins

- 1/2 tsp Cinnamon

- 1/4 tsp Nutmeg

- 1/4 tsp Ginger

- 1 cup Water or Plant Milk

Toppings

- Maple Syrup

- Cranberries

- Walnuts

- Vegan Yogurt

- Coconut

Directions

1. Dice half of the apple. Saute on low-medium heat with spices, carrot and a small amount of liquid for 5 minutes or until soft.

2. Add oats and liquid. Cook stirring occasionally for 10 minutes or until oats are ready.

3. Add in raisins or other toppings.

4. Slice apple into slices or bunnies. To slice into bunnies make a shallow V on the bottom of a thick slice. Then slice off the skin on the top of the V.

5. Add the rest of the toppings of your choice.

6. Enjoy!
