Peanut butter stuffed banana bread baked oatmeal

It tastes like banana bread, but it’s healthy! This is my favorite baked oatmeal recipe I have ever made. The fluffy, thick texture combined with the delightful surprise of peanut butter is literally life changing. Feel free to add anything you want to add into it such as nuts, or chocolate. I say 130g of banana in the recipe because that’s what I found works best, but you can just use around 1 large banana. I haven’t tried it with any other flours, but I would recommend a almond flour starch ratio as a replacement since coconut flour is very absorbent.
Ingredients
1/2 cup rolled oats
1 tsp baking powder
1 tsp cinnamon
2 Tbsp coconut flour
1 Tbsp ground flax
1/4 tsp salt
1/2 cup plant milk
Around 130g of banana(1 large banana)
1 tsp Vanilla Extract
1 Tbsp Nut or seed butter
Directions
Preheat oven to 375F
Mash banana into a bowl and mix in vanilla, and milk.
Add in dry ingredients and mix until combined.
Transfer 1/2 batter to an oven safe bowl or single serving pan.
Plop nut butter in the middle and cover with the rest of the batter.
Bake for 40 minutes
