Chocolate Avocado Pudding Pie

Avocado Chocolate Pudding Pie. Raw, vegan, refined sugar-free, and delicious! This silky smooth, super easy pie is perfect for an elegant holiday dish, healthy birthday treat, or casual monday night therapy. The filling is super delicious on its own too as chocolate pudding.
The crust can be difficult if you have a small food processor. I have a small food processor, so I blended my ingredients in two baches. To press the crust in, it's easiest to use your hands and work it until it's at an equal thickness through out the pan.

Chocolate Pudding Avocado Pie
Ingredients:
Crust-
165g Rolled Oats
80g Chopped Almonds
1 Tbsp Chia Seeds
2 Tbsp Coconut oil or more water for an oil-free version
10 Dates
1 Tbsp Cocoa Powder
¼ tsp Salt
⅓ cup Water
Filling-
½ cup Liquid Sweetener (maple syrup, brown rice syrup, agave) add more if you want it sweeter
2 large or 4-5 small ripe or overripe avocados
½ cup Cocoa Powder
1 tsp Vanilla Extract
⅛ tsp salt
Toppings (optional)
-Sliced Almonds
-Mini Chocolate Chips
Directions:
1)In a food processor, blend almonds and coconut oil until smooth or crumb size pieces.
2)Blend other crust ingredients in with almonds if your food processor is big enough. Mine was too small, so I transferred the almond mixture to a bowl and mixed them together at the end.
3)Spread the crust our smoothly in a 12-inch pie or tart pan. It should be equal thickness across the pan.
4)Add all filling ingredients into a food processor and blend until smooth.
5)Pour filling into the crust and smooth over the top with a spatula.
6)Top with sliced almonds and mini chocolate chips or leave plain.
7)Chill and enjoy!
