Earth Lemon Cheese Cake

This is a vegan earth lemon cheesecake that is actually really easy to make! It's nut free and can be made gluten-free. I made this for earth day and it's absolutely delicious. You can use green food coloring for the green or use different natural colorings. Have fun with it, enjoy it! Happy Earth Day!

Serves 8 Time 1 hour
Ingredients
- 1 Pound silken tofu, one container
- 1/3 cup Sugar
- 1 Tbsp Almond Butter
- 1/2 tsp Salt
- 2 Tbsp Lemon Zest
- 1/2 tsp Vanilla Extract
- 1/2 tsp Lemon Extract
- 1 Tbsp Corn Starch
- 2 Tbsp Almond Milk or Other Plant Milk
- 1 Tbsp Moringa or Green Food Coloring to color
- 1 Tbsp Blue Spirulina or Blue Food Coloring to color
- 12 Oreos or Cookies
Directions
1. Line a 9-inch pan with parchment paper. Squish a large piece in your hands until it's soft. Then place in pan.
2. Preheat oven to 350°F.
3. Crush Oreos and line the bottom of your pan.
4. Bake for 10 minutes.
5. In a small bowl mix corn starch and plant milk
6. In a food processor or blender, corn starch, sugar, extracts, tofu, salt, and zest, until smooth.
7. Pour 3/4 cup into a small bowl. Mix in green coloring or moringa.
8. Mix blue into the large mixture.
9. Pour blue mixture into the pan.
10. Scoop in green and place on top in the shape of continents.
11. Bake for 30 minutes.
12. Cool for 2 hours or more, serve and enjoy!
