Green Donuts

For a green Saint Patricks day treat, try these green donuts! They are healthy, delicious, and marvelously green. These are vegan, gluten-free, oil-free, and have all natural food colorings. These would also work as muffins if you don't have a donut pan. Also, the moringa can be left out or substituted for matcha. The moringa adds a bit of matcha flavor and makes them a bit for green.
Serves 6 donuts TIme 40min
Ingredients
- 1 cup Oats or Oat Flour
- 1/4 tsp Salt
- 1 tsp Baking Powder
- 2 Tbsp Ground Flax
- 1/2 tsp Cinnamon
- 1/4 cup Almond Milk or other plant milk
- 1/4 cup Sugar
- 1 cup Spinach
- 2 Tbsp Apple Sauce
- 1 Large Banana
- 1 Tbsp Egg Replacer (I use Bob Red Mill, but a flax/chia egg would work too)
- 1/2 tsp Vanilla Extract
- 1 Tbsp Moringa or Matcha (optional)
Directions
1. Pre-heat oven to 375°F
2. Blend oats until fine or a flour like consistency. Transfer into a medium bowl.
3. Mix in salt, baking powder, cinnamon, flax, and moringa. Set aside.
4. Blend banana, spinach, and almond milk in a blender until no chucks remain.
5. Prepare egg with 2 Tbsp of water. Let sit for five minutes.
6. Add vanilla, apple sauce, and sugar to spinach mixture.
7. Mix egg, spinach mixture into dry ingredients. Mix until no streaks of flour remain.
8. Scoop mixture into pan with about 3 Tbsp or less than a 1/4 cup of mixture in each hole.
9. Bake for 20 minutes or nothing sticks to the donuts when a tooth pick is inserted.
