Lilikoi Cheesecake Cake

This cake has been one of my better ideas. The fluffy moist cake sandwiches a drippy cream cheese frosting and sweet lilikoi (passion fruit) jam. The combination creates a tart cake full of flavor and beauty. You can substitute the jam for any type of jam you have lying around. This cake is perfect for birthdays, celebrations, picnics, or tea parties.
I make this cake lower fat by substituting the majority of the with apple sauce. This does not affect the texture. It actually keeps the cake delicious moist. The butter I use is Earth Balance.
On the frosting, I only ended up using half of the recipe below because I saved the other half to put on individual slices. Doing it this was will help it keep better since the frosting is drippy. If you are planning on not having leftovers, I would pour the other half over the top. If you want a stiffer frosting, add another cup of powdered sugar to the recipe.
Ingredients
1 1/2 cups Plant Milk
1 Tbsp Apple Cider Vinegar
3/4 cup Apple Sauce
1/4 cup Vegan Butter
1 3/4 cup Sugar
1 tsp Salt
2 Tsp Vanilla Extract
3 cups All-Purpose Flour
2 Tsp Baking Soda
1 Tsp Baking Powder
Frosting
1/2 cup Vegan Cream Cheese
2 cups Powdered Sugar +2 Tbsp Powdered Sugar
1/4 cup Vegan Butter
2/3 Cup Lilikoi Jam
Directions
1.Pre-heat oven to 350F.
2.Grease two nine inch cake pans and sprinkle with flour to make sure nothing sticks.
3.Mix milk and vinegar in a small bowl and set aside for 5 minutes.
4.Mix flour, baking powder, salt, and baking soda together in a medium bowl.
5.Cream together butter, applesauce, and vanilla until combined.
6.Add half milk into sugar mixture and gently mix. Add half the dry and combine. Repeat until all ingredients are combined. Careful not to over mix.
7.Pour evenly into two cake pans. Bake for 20 minutes or until a toothpick can cane out clean. Set cakes aside to cool.
8.Whip all ingredients in frosting with a mixture on slow and speed up. Best for 3 minutes.
9.Lay down first cake. Pour half the frosting and the the jam on the cake. Place the other on top. Either pour the other half of the frosting on top of the cake or sprinkle with powdered sugar.
10.Chill and enjoy!
