Mint Chocolate Chip Ice Cream Sandwhich

This is a perfect recipe for summertime or anytime you crave a creamy ice cream sandwich. They are gluten-free, vegan, no churn, and healthly-ish. They make about 6 ice cream sanwhichs. You can change the flavoring to what every you want! Add cocoa powder for chocolate, add coconut, vanilla, the possibilities are endless.
Ingredients
Ice Cream
- 1 cup cashews - 1 can full fat coconut milk or coconut whipping cream
- 1/4 cup chocolate chips
- 1/2 tsp mint extract - Green food coloring (optional)
Brownie Crust
- 1/2 cup gluten-free flour - 1/2 cup oat flour - 1/4 cup cocoa powder - 1 tsp baking powder - Pinch salt - 1/3 cup applesauce - 1/2 cup brown sugar - 1 tsp vanilla
Directions
Ice Cream
1. Blend all ingredients, except chocolate chips in a blender till smooth.
2. Put in a container or plastic bag and freeze overnight.
3. Chop up ice cream into small cubes and blend it again in a blender or food processor until smooth. Add in the chocolate chips.
Brownie Crust
1. Mix dry ingredients in a medium bowl
2. Add in wet and mix until well combined.
3. Chill over night.
4. In a 8 by 8 inch pan lined with parchement paper spread 1/2 dough evenly.
5. Pre-heat oven to 350F
6. Chill dough for 20 minutes
7. Baking for 10-15 minutes.
8. Repeat for the other 1/2 of dough.
Assembly
1. Chill cooked crust until cold.
2. In a 8 by 8 inch pan, layer 1/2 your crust, ice cream, and crust again. Chill until ready to eat.
3. Enjoy!
