Oatmeal Raisin Cookies

Oatmeal raisin vegan cookies? Lots of baking going around here and it’s not not even the beginning of cookie season. These soft, delicious cookies are perfect for potlucks and kids. You can easily sub the flour to the flour of your choice. I prefer oat flour or whole wheat flour. If you want to add an extra zing, I would add some chocolate chips into the batter before baking. Ingredients:
For 18 to 24 cookies
1 1/2 c Flour
1 1/2 c Rolled Oats
2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup Raisins
1/4 cup Vegan butter, coconut oil or applesauce
1/4 cup Apple Sauce
2/3 cup Brown Sugar
2/3 cup Granulated Sugar
1 Tbsp Ground flax +3 Tbsp Water
1 tsp Vanilla Extract
Directions:
1. In a large bowl, mix flour, baking powder, baking soda, raisins, cinnamon, and oats. Set aside
2. In a medium bowl, cream butter, applesauce, sugars, and vanilla extract until combined, about 2 minutes, with a hand blender on high speed.
3. Mix flax and water in a small bowl. Let set for 5 minutes. Then add to butter sugar mixture.
6. Pour wet ingredients into dry and mix until there are no dry spots left. Put dough in refrigerator for 10-30 minutes.
7. Preheat oven to 375F.
8. Form into medium sized balls then place on cookie sheet lined with parchment paper.
Flatten the balls, leaving 1 inch around each cookie.
9. Bake until golden brown, about 10-15 minutes.

These cookies were moist, tasty, appealing, and delicious! They were the best.
