Pumpkin Baked Oatmeal

This is a great recipe for fall or anytime you have some time and crave that pumpkin flavor. This oatmeal is warm, fluffy, and tastes like pumpkin pie! It takes a little while, but I recommend this highly! If you want to make this into overnight oats or creamy regular oatmeal, just omit the baking powder and add more liquid. Top with or add in maple syrup, walnut, raisins, cranberries, gram crackers, or pumpkin seeds. Enjoy!
Serves 1 Time 30 minutes
Ingredients
- 1/2 cup Pureed Pumpkin (canned or fresh)
- 1/2 cup Oats
- 1/2 tsp Baking Powder
- 1/3 cup Plant Milk
- 1 Tbsp Maple Syrup or liquid sweetener of choice
- 1/2 tsp Pumpkin Spice
- 1/2 tbsp Egg Replacer (I use Bobs Red Mill) or Ground Flax or Chia
- 1/2 tsp Vanilla Extract
Toppings or Mix in
- Walnuts
- Pumpkin Seeds
- Raisins or Craisins
- Plant Yogurt
- Maple Syrup
Directions
1. Preheat oven to 350ºF.
2. Mix all ingredients in a small oven proof bowl or cake pan. I put mine in a mini bunt pan once and that worked fine.
3. Bake for 20 minutes or until the surface of the oatmeal is browning lightly and looks solid-ish. As long as it's not burnt you're good.
4. Top and enjoy!
