Pumpkin Chocolate muffins

These delicious vegan and gluten free pumpkin muffins are a perfect and tasty bake in the fall. I highly recommend making these on a lazy morning for a pumpkin spiced treat. You can substitute the plant milk for water and the gluten free flour for whole wheat. Happy baking!





Ingredients

3/4 cup + 2 Tbsp Gluten free All Purpose Flour

2 tsp Baking powder

1/4 tsp Salt

3/4 tsp Cinnamon

1/4 tsp Ground Ginger

1/4 tsp Nutmeg

1/4 tsp All Spice

1/2 cup Maple Syrup

1 cup Pumpkin Puree

1/4 cup Chocolate Chips


Directions

1) Pre-heat oven to 350F

2) Mix dry ingredients (spices, flour, baking powder, and salt) together in a medium bowl. Add chocolate chips.

3) Mix wet ingredients (Pumpkin, maple syrup) in a small bowl.

4) Pour wet into dry and fold together until combined.

5) Pour into 6 lined muffin tins.

6) Bake for 20 minutes or until fully cooked.

7) Enjoy!
