Split Pea Soup

This is one of my favorite comfort foods, especially on cold or rainy days. This is a vegan split pea soup that is also gluten free, oil free, and soy free. This is also every easy and great for leftovers. It stays well in the fridge and tastes good for days after its made. Lastly, this recipe is very adaptable and easy to change according to what you have in your fridge. For example, on this day I was running low on celery and only had one stalk to add in it, so I added extra potatoes. Just do what feels good, and trust me seasoning is very important. Season heavily. A little tip, get everything out before you start and measure out all your spices before hand. It saves a lot of stress and time while cooking. Trust me on this one.

Yields: 16 cups Time: 2 hours
Ingredients
- 2 1/2 cups Split Peas
- 2 cups Celery
- 1 Onion
- 3 cups Potatoes
- 1 Heaping cup Carrots
- 2 Bay Leaves
- 1 tsp Red Pepper Flakes
- 1 1/2 tsp Oregano
- 1 tsp Turmeric
- 1 tsp Salt
- 1 tsp Celery Salt
- 1 T Minced Garlic
- 2 tsp Dried Thyme
- 1/2 tsp Black Pepper
- 2 tbsp Fresh Rose Marry or 2 tsp dried
- 1 tbsp Dried Parsely
- 1 tsp Dried Sage
- 1 tsp Ground Cumin
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 10-12 cups Water or Vegetable Broth

Directions
1. Gather ingredients and measure out spices. Trust me this will save you time and stress while cooking.
2. Dice and saute onion with garlic and a little water on medium heat for 8-10 minutes or until translucent.
3. Add spices and cook until fragran. A warning, your house will smell great. Add water when needed, if things start to stick to the bottom of the pot.
4. Add carrot and celery. Saute for 2-4 minutes.
5. Add split peas and potatoes. Mix in the pot to spread around all the spices.
6. Add the water or vegetable broth. Stir and cook on medium heat for 1 1/2 hours or until your split peas start to fall apart. Stir every once and a while cooking. When done, stir to break up the peas. This will make the classic split pea texture in the soup.
7. Serve and enjoy!
