Summer Rice Pudding

Vegan/gluten-free

Nectarine/peach cinnamon rice pudding. Wow! I have never made rice pudding before, but this recipe works. I was just trying to use old rice, thought of doing this, and it was absolutely delicious! Perfect for a beautiful summer morning! This is great for quick breakfast, summer, kids, and meal prep. I topped mine with extra cinnamon and cashew butter.



Ingredients for one jar

- 3/4 cup of cooked rice

- 1/2 cup plant milk

- 1/2 tsp cinnamon

- 1-2 dates

- 1/2 tbsp Chia Seeds

- 1 Tbsp cashew butter or other nut butter

- 1 tbsp raisins

- 1 Peach or nectarine


Directions

1. Add all ingredients to a pot on medium low heat. Cook for 10 minutes stirring occasionally. It should have absorbed most of the liquid.

2. Top with more nut butter, cinnamon, raisins, or fruit.

3. Enjoy!

Beautiful, nutritious, and delicious! My only addition would be some grated organic turmeric.
