Tahini Soba Noodles

This is my favorite soba noodle recipe, it's creamy, smooth, savory, and umami full. This recipe is very filling and can be easily changed to what you have in your fridge. These noodles are perfect for nights when you don't have that much time to spend on dinner, but what something delicious. If you what them spicier, I would add more sriracha. Top with green onions, sesame seeds, chilis, and enjoy!

Serves 1 Time 20 Minutes
Ingredients
- 1 serving Soba Noodles
- 1/4 Red Bell Pepper
- 1/2 cup Snap Peas
- 1/2 cup Carrot
- 1 Green Onion Stalk
- 2 Shitake Mushrooms
- 1/2 Cup Broccoli
- 1 Cup Spinach
- 2 Cloves Garlic
- 1 Tbsp Garlic
Sauce
- 1 tsp Mirin
- 2 tsp Tamari or Soy Sauce
- 2 tsp Soy Sauce or Amino Acid
- 1/2 tsp Sriracha
- 1 tsp Tahini
- 1/4 tsp Toasted Sesame Seeds
Directions
1. Boil some water in a small pot, add soba noodles and cook according to package. Rise and set aside. Rinsing the noodles prevents them from becoming to sticky and falling apart.
2. Heat a medium sized pan or wok to low medium heat.
3. Chop and add mushrooms, bell pepper, garlic, ginger, carrot, and snap peas with a dash of water. Cover and cook for 5 minutes.
4. Add broccoli, spinach, and green onion to pan. Cover and cook for 2 minutes or until vegetables are done. Turn off heat
5. Mix sauce ingredients in a small bowl.
6. Add soba noodles and sauce, stir.
7. Top with toasted sesame seeds, green onion, and chili peppers. Serve and enjoy!
