Vegan Gluten-free Angel Food or Sponge Cake

Many people think that you can never get a good vegan, gluten-free, airy cake. Well, their wrong and here's a recipe to prove it. It's simple too! As long as you follow the recipe and pay attention to the batter. This recipe does use aquafaba, but don't be intimidated because have pictures for each step. Aquafaba is the water from a can of chickpeas, don't worry it won't taste like beans. I was skeptical too, but aquafaba really is amazing. Overall, pair this fluffy cake with whipped cream and fruit or chocolate frosting. I made a chocolate avocado frosting with an avocado, 1/4 cup powdered sugar, water, 3 tbsp cocoa powder. Hope you enjoy!






Ingredients

- 1 1/2 t Cream of Tartar

- 3/4 cup Aquafaba or one can worth (the water from a can of chickpeas)

- 3/4 cup to 1/2 Granulated Sugar (depending on how sweet you want it)

- 1 cup Gluten-free Flour Blend (I use Bobs Red Mill)

- 2 Tbsp Chickpea Flour

- 1 tsp Vanilla Extract


Directions

1. Pre-heat oven to 340°F

2. Measure out all ingredients to help everything go smoothy. Sift the flour into a small bowl. Prep your cake pan with parchment paper. Crumble up our parchment paper and massage it for a while until it can easily be smoothed into the cake pan. Like this:

3. Pour aquafaba in a medium bowl and blend with a hand blender for about four minutes on high until ribbon stage, or you start to see the ribbons from the hand blender. Like this:

4. Add cream of tartar and bland on high until soft peaks form, about three minutes.

5. Add sugar in small quantities blend until all combined and add vanilla. Blend until stiff peaks form, about four minutes. Don't be worried if it deflates a bit at first it's okay. It should look like this.

6. Fold flour into aquafaba mixture with a spatula. To fold, you need to softly scoop the bottom then place it on top. repeat until there are no more streaks of flour. Do not over mix this will deflate the entire mixture. Pour it into a prepared cake pan. If you see any small streaks while pouring just mix that spot a little, it's okay.



7. Bake for 40-50 minutes. Or until it is light brown. Try not to open the oven, it can deflate the cake. It should look like this when done.


8. Frost with chocolate frosting or whipped cream and fruit. Enjoy!
