They delicious sausage rolls are perfect for holidays, parties, or at any time really. Carnivores and herbivore alike find them delicious. They are pretty easy to make and can be easily adjusted to your tastes. I made my own sausage like filling, but you could use premade vegan sausages or make a vegetable mixture. Just make sure it binds together enough to hold together. Have fun with it, enjoy!

Makes 12 Rolls

Ingredients

- 1/2 Cup Walnuts

- 2 Slices of Bread or 1 Hamburger bun

- 1 Small Onion

- 2 Cloves Garlic

- 1/2 Cup Crumbled Textured Vegetable Protein or lentils

- 1 Tsp Dried Thyme

- 1 Tbsp Fresh Rosemary

- 1 Tsp Dried Sage

- 1/2 Tsp Fennel Seeds

- 2 Tsp Paprika

- 1/2 Tsp Liquid Smoke

- 1 1/2 Tbsp Soy Sauce

- 2 Tsp Cumin

- 2 Tbsp Cranberries

- 1 Tsp Salt

- Various seeds and flaky salt. I used poppy and sesame.

- 2 Sheets THAWED Puff Pastry

Directions

1. Boil 2 cups of water, turn to low and add our textured vegetable protein till cooked. It should say on the package or about 10 minutes.

2. Chop onion and measure spices. Cook them in a small saucepan on medium/low heat until the onions are cooked through. Add water to de-glaze the pan when it starts to stick.

3. Add dries texture vegetable protein, cranberries and you bread crumbled into fine pieces. Mix until together.

4. Preheat oven to 350°F.

5. Unfold thawed puff-pastry.

6. One sheet, place half your sausage mixture, by grabbing a handful, squeezing it, then placing it on the first line/fold mark. Repeat until you have a log of sausage mixture. Repeat for the other sheet.

7. Take one end of your puff pastry that is not covered by the sausage and roll it over the sausage tightly. Repeat with the other side. You should have a log tightly wrapped in puff pastry. Repeat with the other sheet.

8. Cut logs into 12 rolls, six each. Place on a baking tray lined with parchment paper or silicone baking mat.

9. Brush tops with water and sprinkle a flaky salt and a few seeds. I used poppy and sesame. This part is optional, but recommended.

10. Bake for 30 minutes or until the bottoms are golden brown.

11. Enjoy!
